Hello Kitty cookies

October 7th was my cousin Jo-Ann her twelfth birthday. She also likes baking and I think she is my biggest fan too. I knew I had to make something, but I was not sure what. Soon after wondering what to give her, I received my package with my Hello Kitty cookie cutter. This is the same cookie cutter they used at the Hello Kitty high tea! I was super exited to make these cookies and went on looking for a recipe. They turned out perfect!

So I made her a jar of Hello Kitty cookies, gave her the HK cookie cutter, a jar of pancake mix – with custom Jo-Ann’s pancake mix sticker – and a baking kit from Wilton to make checkerboard cakes.

The hardest part of making these cookies is rolling the dough I think. They cannot be too thick as the legs will not fit anymore. 3mm is the best thickness.

If you roll the dough slightly too thick the cookie will end up with vertical stripes along her face. The left one was a bit too thick as you can see.

These are the cookie cutters to make these cookies. I ordered mine on Ebay. I gave Jo-Ann the cookie cutters too, so she can make them herself. Sadly I didn’t order two back then… Of course I ordered them again for myself but now I have to wait for them again.

Ingredients
  • 100 gram sugar
  • 160 gram butter
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract
  • 180 gram corn starch
  • 180 gram cake flour
Instructions
  1. In a bowl, cream together sugar and butter.
  2. Add the milk and vanilla extract and mix until combined.
  3. Sift in the corn starch and cake flour while mixing with mixer on low or by hand.
  4. Wrap the dough in plastic wrap and flatten a bit.
  5. Place in the fridge for at least half an hour.
  6. Preheat oven to 180 °C.
  7. On a floured surface, roll out the dough until it is about 3 mm. Use your cookie stamp and cut out your cookies.
  8. Place on a lined baking tray and bake for 10-15 minutes (depends on your oven) on 180 °C.
